Roast Chicken with Herb Stuffing

  • 1 pasteurised organic chicken
  • 2 1/2 cups almond meal
  • 1 large egg
  • 4 tbsp olive oil
  • 3 tbsp finely chopped fresh chives
  • 1 large sprig fresh thyme
  • 4 tbsp finely chopped fresh sage
  • 1/2 cup finely chopped fresh parsley
  • 4 large cloves garlic
  • 1 sprinkle sea salt
  • 1 sprinkle pepper


  1. Preheat oven at 180℃ and start preparing the stuffing 

  2. add the egg, almond meal, olive oil, salt, pepper and all the fresh herbs into a food processor and blend until its mixed well and it will start to form a dough like consistency 

  3. take out the stuffing and stuff the chicken, drizzle some olive oil on top of the chicken and rub all over then sprinkle with salt, pepper and some herbs of your choice, I love adding a little thyme 

  4. line a baking tray with baking paper and place the chicken on the tray and bake for 30 minutes or until the chicken is golden brown and cooked all the way through 

  5. When the chicken is cooked remove from the oven and allow to cool for 5-10 minutes before cutting and serving

  6. serve with your favourite vegetables and enjoy
