Chicken Schnitzel

The perfect meal after a long day

Ingredients

  • 2 chicken brests
  • 1 cup almond meal
  • 1 tbsp fresh or dried herbs
  • 1/2 cup olive oil you may need a little more depending on the size of your frying pan
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  1. cut the 2 chicken breast's in crosswise sections (this will create 4 chicken schnitzels)  

  2. put baking paper over each piece of chicken and use a mallet flatten out the chicken breast to the desired thickness

  3. crack the eggs in a bowl and beat for 1-2 minutes 

  4. add the almond meal, herbs, salt and pepper to a large plate and combine well 

  5. heat olive oil in the frying pan on low to medium heat then start to prepare the chicken for cooking 

  6. dunk each piece of chicken in the egg mixture making sure to coat the chicken evenly, then place the chicken in the dry almond meal mixture making sure you push the chicken down into the mixture on each side to form a nice even coating on all 4 pieces of chicken

  7. then add the chicken to the frying pan and cook until the chicken is a nice golden brown on each side 

  8. when your chicken is cooked place on some paper towel to drain excess oil

  9. cut into the thickest part of each piece of chicken to double check it has cooked all the way through

  10. Then serve with your favourite vegetables or you can cut the chicken into bite size pieces and add to your salad
